The short-term research project aimed to improve the current design and operation of in vitro models, in order to translate the in vitro findings to real-world (in vivo) applications.       PhD program under international collaboration between the Riddet Institute (a world-class food research center) and UC Davis, USA. By combining food science, food technology, nutrition, and engineering knowledge, I successfully linked carbohydrate food structure, its digestion in the stomach, and its impact on glycemic response. The project involved various aspects and transferable skills, including: - Food product development and manufacturing in pilot scale for the digestion trials: raw ingredients sourcing (direct contact with suppliers), production process design, and product manufacturing in a GMP environment - Animal trial as physiological model of human digestive system: animal handling, assisting with catheterization surgery, tissue sampling and handling - In vitro digestion experiments: design of experiment, high repeatability experiment execution - Lab analysis and method development: enzyme assays, physicochemical properties, microscopy (CLSM, SEM, brightfield) - Data analysis: big data management and analysis, programming and mathematical modeling to predict data behavior, engineering thinking to model the digestive system - Transferable skills: time and resource management, collaboration, project management, presentation, written & verbal communication, critical thinking, data visualization, presentation, problem solving In my PhD, I worked under the supervision of amazing professors who have helped me to grow my research capacity: Prof. Gail Bornhorst (UC Davis, USA), Dist.
