      Worked closely with the foodservice manager of a commissary system large-scale hospital kitchen, catering to a total of 1000 patients in wards. Was involved in ordering, purchasing and receiving stock for the preparation of the various therapeutic diets (soft, diabetic, vegetarian, low sodium, gluten-free) offered at the hospital. Analyzed the cycle menu to determine the nutritional quality of the meals offered, and gained experience in developing HACCP plans (Hazard Analysis and Critical Control Point) for large-scale recipes. Conducted a health and safety training session for the staff complement (15 foodservice aids, 2 senior supervisors, and the principal supervisor) on the importance of temperature control and the protocol for collecting food retention samples. My time spent here also included an extensive plate wastage analysis project to determine whether the current ward diet was meeting the nutritional requirements of the patients in each ward. The data collected from the plate wastage analysis also helped in determining the degree of food waste occurring at ward-level and the financial implications thereof. Show less
