  I worked collaboratively with other researchers to determine the detrimental effects of trans fatty acids in the human diet. After two years of study, I found that zinc was a major factor in the stress response to trans fats. Zinc fluorescence assays and quantitative polymerase chain reaction assays became my area of expertise.
