During this project I sourced the most current scientific literature on slaughter floor hygiene & combined my practical knowledge of slaughter floors, macropod harvesting & knife handling techniques to assist the clients to implement a MSQA that was recognised internationally for “its technical correctness yet still practical”.-Training for the food (seafood, food service, red meat, wild game, food processing & fresh cut industry) industry in the areas of food hygiene and safety, QA systems management, Food Safety plan implementation and export documentation. -Auditing food safety systems on behalf on clients within an Approved Supplier system (QANTAS catering, Caterair and QANTAS Club). -Development & implementation of an intergrated food safety plan for Brisbane Water, which was recognised as a world’s first by the WHO.-Design and delivery of a series of practical training courses for the indigenous seafood processors across Torres Strait (5 subjects from community hygiene to export management). I have delivered such programs to meat managers, illiterate and sub literate meat workers from diverse ethnic backgrounds: inner Melbourne boning rooms & smallgoods manufacturers, country Victorian slaughter floors, small northern NSW boning rooms and large Qld corporate plants.-Key team member in the implementation of quality systems on plant, including manual preparation. -Development of a generic manual for retail ready product from the boning room chiller to retail outlet, a Meat Safety Quality Assurance manual for an export boning room and a generic QA manual for retail meat outlets.-Development of the Stage 1 manuals for the Victorian Meat Authority QA system. -Development of the QA manual for the sheep skin processing industry in the area of avoiding “grain strain”.

The company boned (at that time) and packed 200+ grain fed steers/day and produced all sausages and corned product for Woolworths supermarkets in Queensland and Northern NSW servicing approximately 3 million people. Responsibilities included:-All aspects of quality and hygiene within: the boning room, sausage processing area, corning room, all associated chillers and freezers. -Foreman of the labourers in the packing & corning sections.-Investigated all customer complaints, questions and problems that related to quality, this lead to targeted trouble shooting and the implementation of a product traceback system. Using the operators in quality circles, particularly in the offal and corning rooms, the procedures were changed and rewritten. -All aspects of new product development.-Training Officer and the Occupational Health and Safety Officer.

-Training of company graders: I was the first AUSMEAT Chiller assessor employed to train a core group of company assessors to assist with the introduction of a new export beef assessment scheme. The company assessors involved in the scheme were trained with various methods on and off plant. A group of approximately 20 assessors came together off plant to attend lectures, study formally and pass exams in 2 week block sessions. -The assessors during this time also attended practical classes in abattoir chillers.All of my students from the area of Kilcoy (Qld) to Macksville (NSW) passed successfully.-Introduced a new export beef-grading scheme.-Graded grain fed beef for the export market as per the AUSMEAT grading scheme-Monitoring retailers in Brisbane involved in the "Right Meat" Promotion.

CSIRO Meat Research Laboratory, Technical Assistant on the M8 MSA Grading Scheme Development-My primary role was that of as a communications officer for the project. I liaised with the feedlots, graziers, meat processors & research scientists involved on the project to co-ordinate sample supply, collection, transport & processing. -I then processed the sample & collated the data and disseminated it amongst the project stakeholders. -The primary producers involved with this project are still some of the most innovative primary producers in the Australian beef industry.
