      Production planning and making sure our products are made according the recipies of our executive head chef. Hiring Staff,purchasing food and stock, making sure every member of staff is trained on proper food preparation and kitchen safety techniques. Making sure the kitchen is kept clean and the kitchen meets all sanitary standards. In this role I was supporting the expansion of Shoryu Ramen to a remarkable 11 restaurants and gradually increasing production volumes, product developement, team and facility expansion to meet the new openings. Also supporting Japancentre, Ichiba, Showaken and Heddon Yokocho with production of some of their fresh food products. In this role I am also managing the production of the highly popular Shoryu DIY Home Kit`s which gave me new exciting experience of delivering directly to ramen lovers the best ingredients for a nice home ramen cooking experience

      Specialised mainly in Donburi and Bento i was able to learn a lot about this kind of Japanese dishes. I learned how to make donburi and bento from scratch using japanese inggredients and techniques.

      This was the job where I fell in love with Japanese food. My job was helping the chefs prepare the ingredients needed to run the Ramen specialised kitchen smoothly. Preparing the broths, yakitori`s, char siu, nitamago, all the sauces and vegetables used for our ramen.
