• Identified a research topic- Application of bacteriocins and protective cultures in dairy food preservation. • Collected literature for my research project. • While drafting this review paper, I had learnt the efficacy of Bacteriocins in eradicating pathogens such as Listeria monocytogenes, Staphylococcus aureus, Clostridium tyrobutyricum among others. • Studied various analytical methods such as spot-on-lawn assay, disc diffusion test and microtiter plate assay to identify bacteriocin-producing bacteria. • Learnt about various purification procedures like ion exchange chromatography, reversed-phase chromatography and characterization procedures like bacteriocin PCR array and monoclonal antibody-coated magnetic beads.
