I lectured food safety management, food quality management, international food law and allergen managemnet to MSc level.The International Institute of Nutritional Sciences and Applied Food Safety Studies is a new interdisciplinary research and teaching institute comprising experts in maternal and infant nutrition, human nutrition and food safety and food policy. Castle Kitchens Ltd - a specialist supplier of ready to eat foods for the retail, aviation and healthcare sectors. As Technical Director I was responsible for product quality, safety and legality. The company manufactured a range of ready to eat hot and cold recipe dishes for major national and international retailers, airlines and wholesalers. I was instrumental in the development and production of a specialist range of allergy free ready meals designed for hypersensitive individuals and project managed the design and build of Europe’s dedicated allergy free ready meal factory. UK Clients included Waitrose, Sainsbury, Morrisons, 3663, Costco, WRVS Meals on Wheels, British Airways and BMI. International clients included Carrefour, Air Canada, Qantas, Singapore Airlines, Turkish Airlines, Air New Zealand, Uzbeck Airways and Finnair. Responsibilities included the following;• Responsible for all aspects of the business relating to product quality, safety and legality• Senior technical contact for all National and International customers • Jointly led the strategic business development function alongside the Managing Director and Finance Director with budget responsibility for both product and service delivery• Led a 10 strong senior technical team responsible for the development and manufacture of a range of ready to eat food and drink products designed for allergic and intolerant consumers• Instigated, designed and project managed the build of the first dedicated allergy free ready meal factory in Europe• Developed and led all aspects of the technical function within the business
