Elba Veronica Arias is my Ph. D. candidate at Texas A&M University, looking at graduation at the end of 2016 or first quarter of 2017. She is a great worker, highly motivated and easy to work with. She is a high achiever always looking for improvement. A great student with high scores and most important, understands the difference between being a leader and being a manager. She is a food microbiologist, specializing in food safety of low moisture foods such as spices. Her research has made relevant contributions to the safety of dry spices and, since she has conducted research on other topics, she also is highly trained in microbial food safety of fruits and vegetables and tree nuts. I would definitely recommend Elba veronica for any job or activity that involves food microbiology, especially but not limited to, microbial food safety. She is an expert in Salmonella and other food borne bacterial pathogens, and has experience with less common pathogens such as Cronobacter spp. She also has work experience implementing food safety practices for growing, harvesting and packing fresh fruits and vegetables. I have no doubt that she will grow to be a highly respected food microbiologist and an excellent food safety professional. Sincerely, Alejandro (Alex) Castillo Texas A&M University

Veronica cooperates well with graduate assistants to complete her research experiments and supports other students in the completion of theirs. She maintains professionalism in the laboratory and has developed into an excellent scientist in training. She contributes to the training of other graduate students and industry members regularly and supports faculty in the teaching of undergraduates and completion of various professional service obligations. Her skills in the microbiological safety of dehydrated/low-moisture food are useful for industry members seeking expertise in controlling pathogen growth in such foodstuffs.
