I had the wonderful experience of working with Ed on joint project. He was a pleasure to deal with, great communicator and very hospitable on site visits. His knowledge of brewing is vast and has been doing a wonderful job at the helm of Cold Town Brewing.

Promotion from role as Brewer. With the expansion of production from 2-3 brews per week to 8 brews per week over the period of year, it was necessary to bring on additional staff and to formalise the roles of existing staff. This saw myself and my colleague split the head Brewer position.I continued to focus on the following areas: maintaining the brewery HACCP plan; maintaining the brewery plant; planning raw materials orders on a just in time basis; continued process optimisation; maintaining health and safety standards in the Brewery; Working with clients on the pilot plant to turn their ideas into beers and overseeing a small team of production staff.I've also had the opportunity to work in a capacity as a brand ambassador for Drygate brand. This has seen me representing the company at a diverse range of events such as, running craft beer and whisky pairing sessions for Jura distillery at their annual Tastival event, which included a beer I developed specifically to pair with their limited edition Tastival expression and taking the brand to festivals such as North Hop in Inverness. I joined Drygate during the build phase of the start up company. I helped oversee the installation and commissioning of our 24hL semi-automated breehouse, tank farm, process and packaging equipment and our 2.5hL pilot plant.Due to the closing of the supplier for the cold block and process equipment, who were also running the management of the installation of the brewery during the build, I took over management of team of pipe-fitters and installed and commissed the packaging plant.Once the brewery was running, along with two other brewers, we started running the production and development of the core and seasonal brands for the brewery. Responsibilities included: operating a semi-automated 24hL brewhouse; all cellaring and filtration duties;packaging of beers into keg, cask, IBC and bottle conditioned formats;maintaining high levels of hygiene in the brewery;formulation and maintenance of the brewery HACCP plan; optimisation of processes; monitoring and maintaining quality and consistency of the product and maintenance and repair of the brewery plant.
