      Gluten-free and dairy-free baked goods I was diagnosed with an autoimmune disease over 10 years ago and had to change my diet to gluten-free and dairy-free to get well and survive. This created a challenge beyond measures. Back then, it was hard to find anything ready to eat that was healthy and fit the bill, besides fruits and vegetables. So I stopped eating at restaurants and started cooking and baking. However, the challenge remains to this very day when I travel.
