Conducted research projects in the area of product development and other areas of foodscience. 1- used defatted peanut flour to develop texturized meat analogs, used extrusion technology to modify complex food matrices such as protein and carbohydrate into texturized meat substitutes. Performed troubleshooting tasks, while optimizing product quality, extrusion parameters, and maximizing production efficiency of peanut-based meat analogs. Took full responsibility for organizing focus group discussion and panelist training. Conducted numerous consumer tests including focus groups, small-scale sensory testing and large-scale sensory testing to assess sensory acceptability of various food products. 2- Evaluated the antioxidant activity of three major sweet potato cultivars grown in North Carolina. 3- Used different techniques such as ozonation to detoxify Aflatoxins in peanut and analytically determined Aflatoxin levels using HPLC, and Elisa Test. 4- Extracted and purified peanut proteins to produce peanut protein isolate using spray-drying technology. Performed chemical and physical analyses, and statistically analyzed research data. 5- Provided technical and logistic assistance to students working in the lab. 6- Presented research finding at professional meetings such as IFT, APRES, and ARD. 7- Production and determination of the physico-chemical parameters of biochar and activated carbon using agricultural byproducts. 8- Managed the laboratory by keeping up to date the inventory, ordering supplies, and performing safety checks. Main objectives were to: (1) Evaluate the hypolipidemic effects (in serum and liver) of a typeof green tea as affected by diet and level of tea intake, (2) Determine the overall impactof green tea consumption on the CHD risk ratio, and (3) explore possible mechanismsthrough which green tea components improve serum lipid profile.
