I worked closely with Debbie Coenen for many years. During that time, I got to witness the passion she has for her work. Debbie was always sourcing the best products and creating the most delicious menu items. What impressed me about Debbie was her depth of knowledge for all skills necessary to run a successful kitchen. Being a Chef and being a Pastry Chef are almost completely different talents, but she has mastered both. Debbie could create a dish, source the ingredients, write detailed recipes, teach the cooking techniques to the staff, then monitor the dish after execution to make sure it met her standards. Debbie saw her business with an artistic eye. She did not hesitate to approach new design, create a different décor, or tweak layouts of advertising and promotional materials. Debbie was as equally comfortable with administration and teaching the staff as she was assessing the dining rooms, schmoozing the regulars, and exchanging hospitality with the guests. Debbie didn’t ask me to do this but I feel compelled. She has one of the best palates I’ve encountered in my career. Everything she creates is unique, colorful, and tastes AMAZING. She gets me to eat and enjoy ingredients I swear I’ve disliked my whole life. Her pastries are life changing. The part that makes her a unicorn is that she sees things through an operator’s eye and works to help managers execute easily, consistently and within cogs expectations. A unicorn in the chef world! As an added bonus, she has an awesome sense of humor even when the dumpster is on fire. Debbie, you are a delight and I’m better for having known you. Lemonade is lucky to have you.
