Radio telephone in head rangers cabin and electricity by diesel generators during peak times. Very rustic, primitive lifestyle. Provided with my own s.all cabin. No alcohol or tv allowed. Teaching /training/preparing different food items ofy knowledge to a classroom of children, chef training students, adults, elderly in an open studio kitchen with mirror above my station for everyone to see. Each person had their own apron and work station to work along with me step by step. A finished product was then tasted by everyone. Lots of fun! Customers came from up to 120 miles away as the population was 1600 in the small Village. Owners sold out to a small franchise owner from Bruce Mines. I then finished the season at Melwel Lodge. Chef, ordering, inventory, menu development, our weekend dinner buffets with chef carving station, homemade onsite dessert station, fresh salads and vegetables. WAS EXPECTED TO WORK 115 HOURS A WEEK. I WOULD LOVE TO SEE SOMEONE ABLE TO FUNCTION PROPERLY WORKING THOSE HOURS. ABSOLUTELY LUDICROUS. It closed after about 2 years and several chefs later. Developed menu from scratch daily from recipes I developed myself from daily purchases.Cooked meals behind Cafe counter infront of clients. Many took notes or asked questions as I prepared the meals a la carte. Desserts also made onsite including hot fudge brownies for 2 to share, Belgium waffles, homemade ice cream, assorted crumbles and fresh key lime pie. I still have all my menus I wrote to follow each day splattered with sauce and grease of course!
