I met Dan about 18 months ago with a view to support the charity I then worked for and what I found was someone who was passionate about the hospitality sector with a desire that any guest would have a fantastic experience with their stay. He enthused his staff with his passion and drive and was also open to finding ways to support the community he worked alongside, Always professional and approachable, Dan was lovely to work alongside and a genuine person.

I first met Dan almost 18 months ago when he first became Manager at The Mercure Dolphin Hotel in Southampton. I asked if he would consider supporting Breast Cancer Haven. In our first meeting he asked lots of questions about the charity and instantly made many suggestions on how he and his team could support our local centre in Titchfield. I knew then that he was compassionate and idea driven. A partnership is a two way process and Dan is open to any idea the charity has to raise money using the hotel. He has driven many ideas forward and is very friendly, approachable and professional. Dan is respected by his peers and team and is without a doubt an asset to the hotel. He is an experienced and talented in the hotel world and it’s been a pleasure to see him turn the Mercure hotel in Southampton into one of the top hotels to stay and eat in the area. I would highly recommend him to anyone.

      This was a temporary job until Marco had left the franchised restaurant. I had full control over the restaurant and bedroom. It was open seven days a week to the public, serving contemporary pub food which was available from Marco’s selection. Working closely with the Brand in ensuring the service standards were delivered, maximising profitability where ever possible. This was a restaurant with bedrooms and included 8 en suite bedrooms. The hotel was a high volume wedding venue, that was well famed locally for its quality of food and service - obtaining and maintaining two AA rosettes. At the height of recession, YoY profit conversation increased by 6% with responsibilities of both food and liquor GP bench marked at 70%.
