Daisy produced a short film to help promote our International Trade Center (ITC) community based tourism project in Kayah State, Myanmar. This was a sensitive job, which needed to walk a fine balance between respecting cultural traditions and the agency of local community members; while also celebrating the new opportunities for income and skills afforded by the project. Daisy hit the perfect spot. I have shown the vlog which she made all around the world as both a great example of Community Based Tourism, and a great example of how to present CBT.       With the tours from Vegan Food Tour Utrecht we introduce people to a variety of delicious vegan food, made by passionate and independent restaurant and cafe owners. During a 3,5 hours tour by foot or on a bicycle, we share their stories of courage, entrepreneurship and pioneering. Our guides will point out interesting sites that you pass during the tours, which include historical, quirky and personal anekdotes. The city tours are available every Friday, Saturday and Sunday. The urban cycling tours are available every Friday and Saturday. We also organise private team-building tours. With Vegan Food Tour Utrecht, we want to introduce people to veganism in a positive way. In order to do so, we are mapping and quantifying the effects of our trips on a destination, its people, the economy, nature, biodiversity, animals and the climate in general. In co-operation with the Impact Institute, we are calculating the true price of transport options to and from our destinations. This includes externalities, like climate impact of CO2e emissions, air pollution and health issues caused by airports (e.g. noise disturbance), that are not yet taken into account when determining the price of a flight ticket.       After the great succes of my first leftover cook book, I recently published my second cook book against food waste. With 'Lekker koken met restjes' I inspire people to see leftovers as new ingredients. I share tips on cooking, buying and storing food. It contains more than 50 leftover recipes for every day of the year. 'Cooking with left overs is fun!' That's the (translated) title of the book I wrote in 2014. Inspired by the campaign Hoezo50kilo I did for the Dutch Nutrition Centre, I decided to share my knowledge about avoiding domestic food waste in a cook book. The book includes 144 pages, filled with over 500 tips on how to avoid food waste. I sold 15.000 copies in a period of 2 years. Restaurant was founded in 2011 in Helsinki and is now spread over more than 22 countries. I initiate the Utrecht version of Restaurant Day.
