  Dorchester was a very interesting challenge. I had the opportunity to write an opening beer list for the restaurant that focused not on brand recognition, but on good beer. Because we had no draft lines I had to rely on events to really drive focus to our beer program. Through this process I made some very important relationships in the Denver beer scene, and nationally. I also accidentally became the graphic artist and was able to create all of my own artwork for the events. I was asked to write a cocktail list that featured some of my favorite classics as well as some of my own creations, some of which were featured locally in print. I was also fortunate enough to see the immense struggle it is to get a multimillion dollar nightclub open. It is a completely different beast with different rules about staffing and conduct. I know now that it is not a scene I want to be apart of.
