At Roest I work across engineering disciplines, with a focus on developing ML solutions to automate and optimise the coffee roasting process. Current work involves harnessing audio data for improved first crack predictions, and video data in our new P2000 for volume, colour, and defect tracking. In addition to overseeing the entire ML lifecycle (from experimentation to deployment), I am involved in developing data infrastructure, using data-first approaches to iterating and troubleshooting both mechanical and electrical components, automating control systems using non-ML methods, and maintaining our backend. A large part of my role is developing schema for proprietary dataset generation to allow future automation. This data is collected from our state-of-the-art machines using high-fidelity sensors, and augmented by domain knowledge and user input. The subjective nature of sensory coffee data, which is prone to regional preferences and trends (concept drift), in addition to the constant data/covariate drift inevitable when working with an agricultural product such as green coffee makes ML and data science in this field challenging and engaging.
