Comparing volatile compounds responsible for taste and aroma in two different fast-food animal-based hamburger products. GC-MS is used to identify the volatile compounds and compare the differences between the products. In addition, multi-variant analysis programs are used to identify compounds which may be responsible for the aroma differences. This work will lead to identification of changes that can be made to improve the aroma of plant-based protein analogs.
