      During the six-month internship, I was exposed to various aspects of both Viticulture and Oenology. With viticulture, I was part of a large team responsible for applying canopy management practices which include suckering and harvesting, having completed a pruning workshop earlier in the year. With oenology, I was exposed to all aspects of wine production, from harvest - where I performed a series of measurements in the cellar's laboratory (which include sugar, pH, TA, etc) - through the onset of fermentation where I performed yeast rehydrations and fining agent/nutrient additions while performing daily pump-overs with red wines. Ultimately, my team members and I were also tasked with ensuring that the cellar was always clean and well-maintained. The internship also coincided with my research project where I had to process my batch of grapes for winemaking, where I evaluated the effect of on-stalk fermentations on the sensory characteristics of Shiraz wine.
