Dear Colleagues, Is the presence of fungi in food a boon or a bane? This is a question that has been asked for thousands of years, but the answer to it still needs further study and research by scientists. Despite this, many studies have revealed that the presence of fungi in food can be: A boon through its ability to ripen and ferment foodstuffs and give them distinctive tastes and flavors and many other positive roles; A bane by spoiling many foods and producing dangerous toxins that directly threaten human health. However, a comprehensive understanding of the vast body of knowledge about food mycology requires a comprehensive volume that covers both the beneficial and harmful roles of fungi in our food supply. In this Special Issue, the latest advances, whether original research articles or reviews, will be addressed in the development and application of new strategies for detecting fungal invasion, mycotoxins, and fungal volatiles responsible for the characteristic baits of many food products (e.g., wine, cheese, sausages). This Special Issue also sheds light on the different roles related to food that fungi may play, whether they are industrial, safety, or nutritional. Microbiota collectively refers to all microorganisms living in a defined environment such as on the skin or in the intestinal tract, mouth, vagina, and eyes, including bacteria, archaea, fungi, and viruses. The largest population of microorganisms in the human body locates in the intestine and is called the gut or intestinal microbiota. Intestinal microbes are involved in a variety of physiological functions to maintain the health of the host, including providing nutrients and vitamins, catabolic drugs, and toxins, protecting the body from pathogens, promoting the development of the immune system, and maintaining epithelial mucosal homeostasis. The microbiota plays an important role in the physiology and pathology of the human body. Cancer is a leading cause of death in the world. According to the World Health Organization (WHO), 10 million people died from cancer in 2020. It is estimated that 10-20% of cancers can be attributed to microbial infections. Many studies have demonstrated that the intestinal microbiota plays an important role in tumorigenesis. Microbes and their products can either have a direct carcinogenic effect or prevent the occurrence and development of cancer by regulating the production of circulating metabolites, inflammation, and immune responses. Cancer immunotherapy is a very promising therapy by boosting the immune system to kill cancer cells and suppress tumor growth. Microbiota on or in the human body can influence immune responses affecting immunotherapy. This Special Issue invites original research and reviews articles that contribute to the understanding of the roles of microbiota in cancer immune responses and immunotherapy which may provide novel approaches to treating cancer. * Job Responsibilities: I joined as a researcher in a Canadian project funded by (NSERC-CRD) to innovate novel methods for rapid and accurate diagnosis of fungal pathogens as one of the biggest threats to human health. * Contribution: Attached to this project as a Researcher to: 1- Develop species-specific molecular markers for human fungal pathogens; 2- Develop antifungal drug resistance – specific molecular markers; 3- Test the effectiveness of these markers for their potential as rapid and accurate Molecular markers; 4- Writer of project scientific reports. * Achievements: (1) In terms of Innovations: I invented a novel molecular diagnostic method for detecting and identifying pathogenic Candida species. This patent opens up new avenues such as the differentiation between drug-resistant and drug-sensitive strains of infectious fungi within the same species (US Patent No. US 62/964,218: Pending). (3) Participate in the construction of a molecular biology lab specializing in (Insect Pests Traceability) at Africa Rice Center, Cotonou, Benin; * Achievements: (1) Inclusion as a biographee in the 2011 Edition of the prestigious publication “Marquis Who's Who in the World”. (2) In terms of Sustainable Development: I wrote a training manual on the traceability of animals and animal products to poverty alleviation by integrating food products from ACP regions into international trade flows, particularly European ones. (3) I developed the universal protocol for analyzing the microbial DNA of insect pests as an innovative and novel technique to trace the geo-origin of insect pests. (4) I participated in the construction of a Lab specializing in (Insect Pests Traceability) at Africa Rice Center, Cotonou, Benin. (5) With the support of this project, I published 2 research publications in high-ranking journals (One of them is ranked as a Top Downloaded Paper, the paper entitled “Tracing insect pests: Is there new potential in molecular techniques” published in “Insect Molecular Biology” is among the top 10 most downloaded papers in 2020, 2021, and 2022).
