      How can the raw material and targeted processing improve the texture of fruit suspensions without the addition of supplementary ingredients?I developed processing guidelines for manufacturers in the fruit and vegetable sector to obtain more natural and sustainable products. For this purpose, I designed and coordinated three innovative projects after the analysis and synthesis of consumer trends and industrial needs. Thanks to these projects, I did not only acquire high technical expertise (GC-FID, GC-MS, HPSEC-MALLS, NMR, rheology, granulometry, physico-chemical analyses, data analysis, scientific writing) but also valuable qualifications in managing and analysing complex issues. Besides, I enhanced my ability of negotiation and profound argumentation as well as my presentational skills through the participation in six national and international congresses. My outstanding organizational skills, the collaboration with other scientists and the supervision of six laboratory assistants and three trainees helped me to successfully accomplish my projects.Please see below for the four research papers that I published during my PhD:

      I´ve chosen to complete my master´s thesis in France to enhance my language skills (English and French) and intercultural competences. I worked within the unit “Safety and Quality of Processed Fruit and Vegetables” (SQPOV) at INRAE and studied the impact of storage and thermomechanical processing on the quality of apple purees (protocol development, food analysis, GC-FID, GC-MS, HPSEC). This internship led to a doctoral thesis at the same unit. I´ve chosen to complete my master´s thesis in France to enhance my language skills (English and French) and intercultural competences. I tested the in vitro antimicrobial effect of the active packaging on foodborne pathogenic and nonpathogenic microorganisms. In addition, I co-developed a method to quantify the volatile active compounds by Headspace GC-MS. A scientific article was published in Food Microbiology. The work included chemical synthesis, structural characterization by NMR and GC-MS techniques and determination of odour thresholds. The results contributed to a publication in the Journal of Agricultural and Food Chemistry. I lived within a family with three nine-year-old children, which I supervised, for example, during their homework or free time activities. Thanks to this stay, I did not only reach a high level of Spanish but also a deep sense of responsibility.
