If there is any non-conforming product I would make a decision on what to do with that be it reworked, thrown away or anything else and I also handled any emergencies that happen on the floor. If the health department or the FDA were to come through the plant I would also handle that, show them our production flow from start to finish, answer any questions they may have had and show them any necessary paperwork. I was also responsible for all the initial quality assurance training (GMP, HACCP, Kosher status, etc etc) for all of the new plant employees as well as the annual retraining for our audit. We have a few customers that require an online database of all their documents and I am responsible for keeping that updated and accurate. I check our HACCP system once a day and handle all of the corrective measures.
