I made a new drinks list, which seen us increase our wine and cocktail sales by 15%.

I worked closely with the GM, who I learned a lot of 'back of house' skills from. I was in charge of around 18 part time members of staff, so developed my man management skills vastly. I helped with rota's and ordering, as well as keeping a close eye on stock control.

At Banchory Lodge, I was in sole charge of two bars - a function bar that catered for up to 160 guests, and a fast paced residents/restaurant bar. I developed new drinks menu's and incorporated a lot of local products to our beverage offering. I introduced strict stock control, which saw an improvement to our weekly GP. I was in charge of leading a team of around 8 bar staff.

At all times, my main responsibility is to make sure staff are providing an enjoyable and professional experience to our customers and residents. Meeting the five star standard must be achieved every single night. I am in charge of 'closing up' every night, which involves tidying up work stations, resetting the restaurant once all the guests have left, and cash up.
