• Thesis title: "Biological and immunological activity of Synsepalum dulcificum for the development of functional foods".Supervisors: Dr. Ceferino Maestu Unturbe, Dra. Carmen Ramírez Castillejo and D. Loan Bensadon Naeder.Carrying out the physicochemical analyzes and biological assays necessary for the authorization of the DMB® product (based on miracle berry) as a Novel Food by the European Food Safety Authority (EFSA). Techniques used: - Protein extraction and purification by affinity chromatography. - Protein analysis methods: Western blot and dot blot, ¹H-NMR, ELISA assays (allergen detection). - Genetic Engineering: Recombinant Protein Production. - Cross-allergenicity in-silico analysis. - Cellular assays: cell culture, hemagglutination assay (determination of lectin content), immunogenicity assays (lymphocyte proliferation and differentiation, basophil activation test), immunocytochemistry and flow cytometry. • Collaboration in the drafting of two research projects, PID-CDTI and CERVERA-CDTI, both granted.• Tutoring of a total of 6 students (2 Bachelor's thesis and 4 Master's thesis) in projects of interest to the company, obtaining an average grade of 9.1/10. • Theoretical and practical university teaching of a total of 86 hours in the subject of Systems Physiology (Biotechnology) and Exercise Physiology (INEF).• Publication of 2 research articles (10.1016/j.foodchem.2021.129341 y 10.3390/antiox9121282).• Participation as a scientific evaluation committee in the XII and XIII editions of the Congress of University Students of Science, Technology and Agronomic Engineering (ETSIAAB-UPM).
