While settling into the Bay Area and looking for the right venture to team up with, I moonlighted as a mixologist (bartender with creative skills) and eventually Bar Manager in a modern Italian fine dining establishment. For an overall idea of what it is like to work in a front of house (FOH) position in a fine dining establishment, think of the restaurant as a pool of water, in which each member is a molecule of water, briefly touching and making small bonds with patrons and other members of the floor. Everyone FOH has their own role, but is working together to provide each guest the top level of service, to the ultimate purpose of creating an experience that parallels the quality of the food. The roles are not static, but dynamic, to create the overall 'gelling' experience. Key transferable skills include the abilities to anticipate situations and needs, "read" others and operate in a public-facing capacity, remain cool under pressure, work well in a team and be independently.
