I'd never entertained the idea, or worked in the industry, but deep inside I was compelled to jump on board. For over a decade I had dreamed of growing food on a micro farm practicing sustainable, beyond organic practices. It dawned on me, why not build the way to serve the food to folks, then once established create the source. The farm. So, I dove in. I discovered that our nation needs and desires to be reintroduced to the remarkable taste of a meal sourced and prepared with care. With love. A meal with flavor derived preparation, growing methods and ingredient composition rather than processing, artificial additives and excessive sodium. Food not created with profit margin as the key driver. A decades old food system has been created in the United States that is the ultimate reason for why we have lost understanding and accessibility to high quality, nutritional, and diverse food sources. After seeing that from the restaurant industry, as a chef and restaurateur I wanted to gain and even more holistic understanding. I wanted to see this system from a farmer's perspective. So I headed to a trial farm in the Finger Lakes region of New York State and picked up a job as a farmhand at one of Bejo Seeds' trial farms. Officially my "daily responsibilities included all aspects of plant production including but not limited to seeding, transplanting, maintaining, and harvesting greenhouse and field grown vegetables" (as stated by the Craigslist help wanted ad). So basically, I pulled weeds, drove tractors, moved rocks, grew things, worked hard and learned as much as I could about traditional, commercial field crop production and plant breeding practices. I was also lucky to be able to support a 5 acre hop yard gaining extensive knowledge about this re-emerging regional crop. Show less
