FETTUCCINE ALFREDO The history of Alfredo alla Scrofa Restaurant begins in 1914 when Alfredo di Lelio opens a small tavern in this historical street in the center of Rome. As a gift for his pregnant wife, the owner invents fettuccine Alfredo, fresh egg pasta with butter and Parmesan cheese. A dish that gains an international reputation in a very short time. In Rome the “Dolce Vita” was flowering and thanks to the star system the fettuccine Alfredo became the icon of Italian cuisine. Indeed up to today this dish remains the most famous and replicated Italian recipe in the world. Over a hundred years have passed since those days, and there have been so many requests to open a "Fettuccine Alfredo" restaurant abroad, able to carry along the tradition of true fettuccine Alfredo. For this reason, the owners reconsidered the business of their working activity creating a system capable of standardizing product and service, and setting up an easy replicable format. The professionalism of the network promoted by "Fettuccine Alfredo" grants exclusive services and prestigious symbols such as know-how, internationally consolidated trademarks, operational manuals, staff training, marketing plans, supply of food and grocery products, of merchandising, of web communication and more. All these elements allowed us to work in Asia, in the United States and in the United Arab Emirates with two kinds of formats: a fine dining restaurant faithful to the Italian and Roman gastronomic tradition, the "Fettuccine Alfredo", ideal for elegant contexts; quicker and easier street food format, the "Fettuccine Afredo Bar", that focuses on the production of the famous fettuccine in different combinations, declined starting form the iconic fettuccine Alfredo.
