Innocent Spirits Distillery is an innovative spirit producer based in Cape Town, South Africa. We consider ourselves more as a technology company rather than a microbrewery or a craft distillery. We combine the highest quality base spirits with our innovative patented proprietary technology to accelerate the traditional ageing process. Our process combines pressure variations, oxidisation, energy and extracts that naturally preserves flavours and reduces the maturation time to 24 hours. We can therefore massively reduce spirit lost in the barrel and accelerate our product to market. As we are not constrained by industry practices or traditions, we believe we are a just-in-time manufacturer with new flavours that can be reached the market in a fraction of the time and therefore can push the limits of natural aromas and flavours creating a series of unique finished high-quality affordable spirits.
